creamy cilantro cucumber salad

All the goodies from this Summer’s harvest (and some corn frozen from last year):

creamy cilantro dressing

2 bunches fresh cilantro
1 cup virgin olive oil
1/2 cup vinegar (I’ve tried both distilled and apple cider)
1/4 cup raw sugar (raw honey would be good too…waiting for a local order)
1/4 cup lime juice
1 can coconut milk (try cream or yogurt too)

combine all in blender (makes about a quart)

cucumber salad

1/2 cup creamy cilantro dressing
2 cucumbers, peeled, quartered, and sliced
1 cup cooked and cooled corn (or frozen and thawed as ours was)
1 large sweet green pepper, diced
2 tomatoes, diced
1/2 cup raw cheddar cheese, diced
1/4 cup raw sunflower seeds
1/8 cup sesame seeds
1/2 tsp sea salt

combine and serve

serves 6-8

Neither my dad or mother-in-law tolerate cilantro…my dad is allergic…so sad that they have to miss out on this lovely treat!   Do you have a great cilantro dressing we need to try?  xo ~ katrina
