Oh, my, yummy yummy. If you’re as crazy as we are about apple crisp and you have loads of large zucchini coming out of your ears…this recipe is for you. Go ahead. Serve it with dinner…after all, it is a vegetable!
zucchini apple crisp (thanks zucchini houdini!)
1 extra large zucchini
2 tbs lemon juice
1/2 cup raw sugar
1 tsp cinnamon
1/2 cup rolled oats
1/4 cup whole wheat flour
1/4 cup organic butter
- Peel zucchini (so kiddos and skeptics cannot see green). Cut in half lengthwise and remove seeds. Cut into 1/4″ slices so they look like green apples
- In a large bowl, combine zucchini slices and lemon juice. Stir until lemon juice is over all zucchini.
- In a separate bowl cut butter into remaining ingredients. Grease an 8×8 baking pan with coconut oil or butter.
- Toss remaining ingredients with zucchini. Spread over pan and bake for 35-40 minutes at 350 degrees. Serve hot with your favorite ice cream.
