When my parents returned from their third trip to Costa Rica, they got sick shortly after being home. For a while they figured they’d caught something on the plane ride home. But after weeks and months, and lots of strange tests at the doctor’s office {seriously weird things}, they began trying a different approach. My mom began including probiotics in her diet. Mainly, she was drinking a lot of kefir. At the time, you could only find kefir in specialty food stores.
Recently, I’ve been seeing it stare at me in my local Store. I wondered what it would be like to use kefir in some of our favorite foods. So I bought some. Since then we’ve made cookies pancakes, soup, and muffins. Here is the muffin recipe:
kefir blueberry & pecan spelt muffins
3 c spelt flour
¼ c raw sugar
1 tbs baking powder
½ tsp baking soda
½ tsp salt
1 c kefir
2 tbs lemon juice
1 stick butter
1 ½ c blueberries
1/3 c coarsely crushed pecans
Mix all ingredients except blueberries and pecans. If the batter is too moist, add another ¼ cup flour. Carefully fold in the blue berries and nuts. Bake in mini muffin pan at 375 degrees for 10-12 minutes.
makes almost 2 dozen mini muffins.

Great recipe! There is soo much you can do with kefir, and its soo good for you. I started giving it to my daughter for her intestinal problems, and now our whole family is drinking it every day.
