The kiddos and I have been baking quite a bit…not really for any particular reason. Sometimes I think of reasons, but most of the time it’s just because we enjoy cooking together. And it makes me happy to think that we can enjoy cooking together forever.
Another lovely recipe from Nigella’s How To Be A Domestic Goddess {thanks to Nancy Wishart}…
dense chocolate loaf cake {wheat-free, spelt version}
1 c butter, softened
1 1/2 c brown rice syrup
2 large eggs, beaten
1 tsp vanilla
4 oz bittersweet chocolate, melted
1 1/3 c spelt flour
1 tsp baking soda
- Cream the butter and sugar. Add the eggs and vanilla. Beat until smooth.
- Fold in the melted, slightly cooled chocolate. Blend well, without over-beating.
- Separately mix flour and baking soda. Add it to the other ingredients slowly, while mixing.
- Pour into a lined or heavily floured baking pan. Place baking pan on cookie sheet in case gooey batter bubbles over in the oven.
- Bake at 375 for 30 minutes.
- Lower heat to 325 and cook for 15 more minutes.
- Allow loaf cake to cool completely before turning over.
Serves 8-10….yummy!
