development – creamy zucchini soup

Another warm Fall soup…one of my favorite parts of Fall!

1 large garden zucchini (if store bought better get a few) :), diced
1 acorn squash, seeded and skin peeled, cut into 1 1/2″ pieces
1 large onion, chopped
2 cloves garlic, pressed
2-3 tbs olive oil
1 c coconut milk
1/4 c chopped fresh chives
1-2 sprigs oregano
2 c water

  1. In a large soup pot, warm oil and add garlic and onions.  Cook on medium heat for 5-6 minutes.  Add acorn squash and cook till soft.
  2. Add herbs and water and saute for another 15 minutes.  Add zucchini and cook another few minutes till soft.
  3. Puree all in blender.  Return to soup pot and add coconut milk.  Warm until ready to serve.  Salt to taste.
