Another warm Fall soup…one of my favorite parts of Fall!
1 large garden zucchini (if store bought better get a few) :), diced
1 acorn squash, seeded and skin peeled, cut into 1 1/2″ pieces
1 large onion, chopped
2 cloves garlic, pressed
2-3 tbs olive oil
1 c coconut milk
1/4 c chopped fresh chives
1-2 sprigs oregano
2 c water
- In a large soup pot, warm oil and add garlic and onions. Cook on medium heat for 5-6 minutes. Add acorn squash and cook till soft.
- Add herbs and water and saute for another 15 minutes. Add zucchini and cook another few minutes till soft.
- Puree all in blender. Return to soup pot and add coconut milk. Warm until ready to serve. Salt to taste.
