Brought this delightful concoction to our Mother’s Day Celebration. The explorer was a big fan. 🙂
Ingredients:
1 cup chickpeas (i soaked them over night & cooked them in the crock pot on low for about 6 hours)
3 tbs olive oil
1 1/2 tbs lime juice
1 tsp curry powder
1/4 c cilantro
1/2 tsp salt
1/2 avocado
1 clove garlic
Combine all in blender or food processor. Enjoy with Naan or chips, fresh veggies…yum! 🙂
