Chelsy, this recipe is for you!  🙂  The designer was quite excited about this new culinary adventure.  Using the granola recipe, I mixed the ingredients and then pressed the mixture into the cookie sheet and sides.  I wondered if it wouldn’t be chewy enough, but by leaving it (not stirring it like in the granola cereal), the moisture is preserved, and it is chewy. I simply cut the bars with a knife.  I’m leaving mine out over night (with a dish towel a top), hoping they’ll harden a  bit more.

So here’s the recipe:

ingredients

1/2 c honey
1/3 c coconut oil
1 tbs vanilla
1/2 tsp salt
3 c oats
1/2 c seed mixture (we used flax, sesame, and pumpkin seeds)
1 c chopped nut mixture (we used 1/2 c almonds, 1/4 c hazelnuts, and 1/4 c walnuts)

1. Mix honey, coconut oil, salt, and vanilla in a large bowl. Add oats, nuts and seeds and mix thoroughly.

2. Spread over greased cookie sheet (about 1/2″ thickness). Cook at 350 degrees for 16-18 minutes. Let cool and cut into desired bar sizes.
