We had a death in our house last week, the death of my computer. Death by counter cleaner. So sad. Anyways, I lost the photos from last week. I’m going to try and take it to the computer doctor tomorrow. I’ll look on our back-up to see if the photo is there, but I think that the last I backed up the computer was a few days before the incident…sob. You’ll have to use your imagination, or just try this wonderful recipe and send in your photo.
We don’t buy pork, but my girlfriend’s freezer broke and she was throwing out her meat that she couldn’t cook. I might be a food snob, but like many of you, we’re also on a budget, and pork once a year sounds pretty good to me.
3 lbs pork roast
2 c chicken stock
1/2 onion, halved and sliced thin
2 tbs Worcestershire sauce
4 tbs soy sauce
2 cloves garlic, pressed
1/4 c green olives
1 c artichoke hearts, quartered (I used marinated ones from a jar)
2 tbs lime juice
1 1/2 tbs parsley
1 tsp oregano
1/2 tsp thyme
Combine all in the crock-pot, cook on low for 4-6 hours and enjoy with your favorite brown rice variety.
As for the leftovers, the following day I added a cup of chicken stock and some pinto beans I soaked the night before. Soon we had a delicious homemade pork & bean stew…italian style.
