Do you ever just look at some ingredients and know that combined, they will taste fabulous? That’s what happened this afternoon as I was scrounging for our dinner. We’ve been so happy to have fresh, locally grown pears given to us this week. I wanted something simple and not too strong. The older kiddos both enjoyed it. Here’s the recipe:
Ingredients
1 c coconut milk
1 can artichokes
6 small pears, sliced
1 tbs parsley
1 tsp ginger
1 1/2 lbs chicken, (or 3 breasts) boneless skinless, sliced into small pieces
salt to taste
In a large saucepan, simmer all but chicken for 15 minutes, while cutting the chicken. Add chicken and cook on medium heat for 6-8 minutes, or until chicken is cooked thoroughly. We ate it over brown basmati rice. Serves 4.
