spelt pecan porridge
1 cup spelt berries cracked, rolled, or ground into flour (as I did)
1 cup warm water
1/2 tsp sea salt
1/2 cup ground pecans
2-4 tbs butter or coconut oil
1/2 tsp vanilla
1/2 tsp nutmeg
1/2 – 1 cup almond milk
toppings:
fresh berries
bananas
hemp hearts
chia seeds
raw honey
1. Easiest & most beneficial is to soak the spelt flakes/flour the night before in the water. I’ll cover the bowl with a light cloth & simply leave it out on the counter or in the pantry. You can also leave it in the fridge. (Didn’t have time the night before? No worries, just heat a bit longer till spelt softens.)
2. In the morning warm on medium low heat with remaining ingredients. I like my porridge a bit thinner than the rest of my family & will stir in the extra 1/2 cup almond milk at the table.
3. Add whatever toppings you have/prefer, and enjoy!
