The first day and a half with the flu, the dancer didn’t have much of an appetite. This morning she was ready: requesting pancakes, and I wanted to make sure to stick all I could in those lil’ cakes.
3 cups oats
2 cups almond milk
1/2 cup greek yogurt
1/2 cup blueberries (we used frozen)
2 tsp baking powder
1 tsp baking soda
2 large eggs
1/2 tsp cinnamon
1 tbs apple pie spice (cinnamon, allspice, nutmeg, ginger, cardamom – pumpkin spice would also be good because it has cloves)
mix in blender until smooth and cook on medium heat.
makes 2 batches: 24-30 pancakes (in each)
