It’s officially cold outside :). We had our first snowfall recently and the kiddos bundled up and bounded outside to make a snowman. When they realized it wasn’t “snowman weather” we made snowball cookies instead, though I went for a mexican wedding cookie with a bit of zing. My aunt Buffie puts lime juice in her cookies…and they are divinely divine. I had lemon juice, so here is our version of the zingy snowy treat:
2 cups pecans or walnuts (we used almonds), ground in blender
1 cup whole wheat flour
1/2 cup all purpose flour
1/2 cup oat flour
3/4 tsp salt
2 sticks butter, softened
1/3 cup raw sugar
1 tsp vanilla
1 tsp lemon juice
1 cup raw sugar (blended to powder)
- Combine all but powdered sugar
- Roll 1 tbs into balls
- Bake at 325 for 18 minutes
- Allow cookies to cool on sheets for 5 minutes before rolling in powdered sugar
(they may need to be rolled again)
