development – cheesy cauliflower soup

When I was first put on osteoporosis supplements, Dr. Rosenberg also had me meet with his dietitian.  By the end of the session, I was giving her some suggestions that she was going to try…:)  Anyways, they recommended me eating more food high in calcium.  We already ate quite a bit of spinach, but I’ve never found broccoli and cauliflower on my favorite list.  Within a week of eating tons of cabbage and broccoli, we realized why.  I was getting some major tummy aches at night.  We decided to get calcium other ways.  Recently, we’ve been eating cauliflower with other vegetables in creamy soups and I haven’t had any problems.  In fact, I loved it!  Perhaps another NAET benefit…thanks ZD!

cheesy cauliflower soup

1 onion, sliced
4 cloves garlic
3 stalks celery, sliced
4 tbs butter (or olive oil)
1 head cauliflower
2 red potatoes, diced
1 ½ c carrots, sliced
1 tbs parsley, dried
1 tsp Mexican oregano, dried
1 tsp marjoram, dried
1 tsp rosemary, dried
2 c water
1 c coconut milk
1 c white cheddar cheese, grated
¼ c lemon juice
1 tsp salt

In a large pot, sauté butter, onions and garlic for 3-5 minutes.  Add remaining vegetables and herbs and sauté 10 more minutes.  Add water and simmer for 20 minutes.  Puree in blender and return to pot.  Add coconut milk, cheese, lemon juice, and salt.  Warm until cheese has melted and serve.

Serves 8-10
