Over the past month we’ve been on a pizza kick. We’ve experimented with whole wheat, spelt, oats, and a few other gf grains in between. We have decided on a favorite tomato sauce (when I don’t prepare our own), and have even tried a mediterranean sauce to use instead of tomato. Toppings of all kinds found their way onto our pizza; fresh herbs and anything else that was lying around. It has been a lot of fun. Sunday we shared some pizza with my parents and brothers: spelt bread with cheese/herb dana jeera chicken/turkey sausage/pepperoni. Per request of my lovely mother…here is the recipe. Enjoy!
Spelt Pizza Dough
(makes two pizzas that will cover large cookie sheets)
5 c spelt flour
2 c warm water
2 tbs yeast
2 tbs honey
1 tsp salt
In mixer combine water and yeast. Add remaining ingredients and mix on low with a bread hook for 3-5 minutes. Sprinkle corn meal on the cookie sheets and roll dough onto pan. After spreading sauce and desired toppings, cook at 350 for 12 minutes.
