We’ve enjoyed this wonderful garden dish over and over the past couple weeks…a great “straight from the garden” dish. Easy and quick, a fabulous pick to bring to any function or Summer dinner party.
1 1/2 lb green beans, ends trimmed, and cut into bite sized pieces
1/2 c olive oil
4 tbs lemon juice
1/2 sweet onion, diced
3-4 chive leaves, cut into 1/2 centimeter pieces (fresh)
2 sprigs of parsley, minced (fresh)
3/4 tsp salt
1. Blanch green beans in boiling water. (If you like your beans soft, boil for 3-4 minutes).
2. Combine with remaining ingredients in a large bowl.
Yes, its just that easy. The flavors are incredible. You can make it ahead and store in the fridge, leave it over night, or just make it and take it. Enjoy!
