The kiddos and I made his birthday cake pick this morning so we could all enjoy it together during his lunch break.
The original recipe was always my birthday pick from my mother’s recipe box. It is delicious and way too easy to be considered cheesecake! I changed a few things, but its still pretty close…
2 cream cheese packets (8 oz.)
scant 1/2 c raw sugar
1/4 tsp almond extract
3 large eggs
1-2 c strawberries
2-3 tbs agave nectar
- Preheat oven to 325 degrees.
- In a mixer, beat cream cheese until creamy
- Add eggs, one at a time
- Add sugar and almond extract
- Beat until thick and lemon colored
- Bake for 50 minutes
The designer had a window to eat his cheesecake, so we ate it warm, though I always remember my mother letting it cool and then keeping it in the fridge to help it firm up until it was to be served.
The strawberry sauce was pureed in the food processor: 1/2 c sliced strawberries and 2 tbs agave nectar.
