kiddo daily delight – (chocolate avocado sour cream cupcakes) amelia mixed the mustard by a.e.housman


I know, I know, too long of a title…but we did make some amazing chocolate cupcakes this afternoon with secret ingredients of avocado and sour cream.

It’s been a while since I’ve eaten chocolate cupcakes.  The kiddos and I have made a few treats this week, though these were meant to be documented.  The builder had requested “green cupcakes,”  And I decided that green icing would have to do (with green avocados inside).

Thanks to the lovely Nancy Wishart, we’ve been happily exploring some Nigella Lawson treats from How To Be a Domestic Goddess.  There is a recipe within,   “Sour Cream Chocolate Cake with Sour Cream Icing” that I’ve been longing to try.  I’ve also been thinking about a recipe found within Whole Foods May/June 09 magazine for “chocolate-avocado cupcakes,” inspiring my taste buds.  Taking both recipes, this is the yummy result:


Spelt Chocolate Cupcakes with Avocado and Sour Cream

cupcake ingredients:

1 avocado, pitted and peeled
3/4 c sour cream
2 tsp vanilla
1/2 c raw (turbinado) sugar
1/3 c coconut oil
2 eggs
1 1/2 c spelt flour
3/4 c unsweetened cocoa powder
1 tsp baking powder
3/4 c baking soda
3/4 tsp salt (use the good stuff)


1 c confectioners sugar (the best you can find)
1 tbs brown rice syrup (agave nectar would also work well)
1 tsp vanilla
1 tbs spelt flour
3 drops green food coloring

cupcake directions:

1. In a food processor, combine avocado, sour cream and vanilla.  It should look something like:

2. In the mixer, cream the coconut oil and raw sugar:

3. Add the eggs and avocado mixture to mixer and blend till smooth.
4. Combine remaining ingredients and add to the mixer.
5. Spoon into greased cupcake pan. Bake cupcakes for 25 minutes at 350 degrees.
6. After removing from the oven, leave cupcakes within the pan for 10 minutes to cool.

For the icing…blend ingredients and enjoy. 🙂

As for our kiddo daily delight, the kiddos loved baking the cupcakes.  I enjoyed mine without icing but accompanied by some almond milk

  1. I laughed about the avacado frosting- my little girl eats a daily avacado/banana smoothie! Everyone thinks it’s wierd but she loves it! Lol

      That’s funny, I was just thinking this afternoon that we should have a smoothie tonite with some avocado (I try not to let the builder see me put it in…cause he thinks, “avacados don’t go in smoothies!”)
