This afternoon, I marinated some chicken using this makhani recipe. We ate it alongside Janelle’s (happy birthday tomorrow lady!) yummy salsawith corn chips. I didn’t take the time to make the makhani gravy/sauce, but will definitely be doing that soon, for it looks wonderfully divine!
Chicken Makhani Marinade ingredients:
1 1/2 lbs chicken, chopped into 1 1/2″ pieces
1 can coconut milk
1 can coconut milk
1 tsp harissa
salt to taste
2 tbs ginger (dried)
2 tbs lemon juice
2 cloves garlic pressed
1/2 tsp garam masala powder
2 tsp mustard
salt to taste

After letting ingredients marinade for a couple hours, place in skillet on medium for 5-7 minutes or until chicken is cooked through.
As for Janelle’s Yummy Salsa (it’s written down somewhere…but from my head):
1/2 large red sweet bell pepper, chopped
2 medium tomatoes, chopped
1 cup white corn
2 ripe avocados, chopped
1/4 c cilantro, chopped
1/4 c olive oil
2 tbs white wine vinegar
salt to taste
Mix together in large bowl and enjoy!
