Can you cook healthy on a budget?  Yes, oh, yes!  Here is an easy dinner that is inexpensive, and I found all of my ingredients in the house already…

Ingredients:

2 1/2 onions (cut in half and thinly sliced)
2 tbs butter (or your favorite butter substitute)
1 tsp thyme
1/2 tsp herbes de Provence (it is a french soup after all)
1/2 tsp salt
3 tbs balsamic vinegar
7 c chicken stock
bread (sliced 1″ thick)
shredded cheese of your preference

1. Caramelize onions with thyme, herbes de Provence, and salt in melted butter (or olive oil), on medium heat for about 20 minutes.  Stir occasionally.

2. Stir in vinegar and broth.  Simmer for 20 minutes.

3. In traditional french onion soup, you pour the soup into individual bowls put bread and cheese a top and broil till cheese melts.  I cheated because our spelt bread would not cover the bowl, and I thought it would be quicker.  Still tasted marvelous.
