The kiddos and I had our first attempt at homemade granola this morning. We were eating it as soon as it dried. I didn’t realize homemade granola could taste so good.
Ingredients
1/2 c honey
1/3 c coconut oil
1 tbs vanilla
1/2 tsp salt
3 c oats
1/2 c seed mixture (we used flax, sesame, and pumpkin seeds)
1 c chopped nut mixture (we used 1/2 c almonds, 1/4 c hazelnuts, and 1/4 c walnuts)
1. Mix honey, coconut oil, salt, and vanilla in a large bowl. Add oats, nuts and seeds and mix thoroughly.
2. Spread over greased cookie sheet. Cook at 350 degrees for 16-18 minutes. Stir a couple times while baking.
3. Let cool until dry and crunchy (this did not take long for us) :), and store in an airtight container.
Makes about a pound of granola.
The kiddos and I cook quite a bit, but this was a very easy cooking adventure. The builder is getting very good at pouring and loved spreading the granola out on the cookie sheet. As for the dancer, she loved tasting the dry granola.
As I am currently working on inviting the kiddos to participate with me in household chores & tasks, re-reading The Cock, the Mouse, and the Little Red Hentogether was a no brain-er. They love the smart hen and her idea to put rocks in the wolf’s sack. I like that we can not only discuss being helpful, but being wise in answering the door. A beautifully illustrated book packed with learning lessons.
