Tilapia with Capers & a Pear sauce, homemade spelt bread (still tweaking the recipe…hopefully to share tomorrow), with Swiss cheese basil and a green salad with pumpkin seeds, snap peas, balsamic vinaigrette, and grated Swiss cheese.
This is a very easy, healthy meal. There are four of us that eat tilapia, but we only need 2 fillets. Double your sauce if you are feeding four hearty eaters. 🙂
Ingredients
2 tilapia fillets
1/2 ripe pear
1 tbs lemon juice
2 tbs coconut oil
1 tsp herbes de Provence
1/2 tsp Thai spice
2 tbs capers
1-2 tbs olive oil
1. In a small food processor, mix pear, lemon juice, and coconut oil.
2. In a saucepan, warm olive oil and make sure it covers the surface of the pan. With heat on medium, place tilapia in the saucepan. Pour the pear sauce over the fillets, sprinkle herbes de Provence, Thai spice, and capers over the sauce.
3. Cook covered for 15-20 minutes, or until fillets are cooked through (fillets will be white and without the glassy look).
The coconut oil and pear give just a bit of sweet, the Thai spice a bit of spicy, the capers & lemon a bit of sour, and the herbes de Provence complete the dish…result = a happy mouth!
