development – back to basics enrichment class

My mother-in-law has a bi-monthly class for Enrichment, where they are covering all kinds of food basics.  Tonight, they discussed three grains: corn, oats, and rice.  She asked me to come and discuss oats with the ladies.  Here are the recipes we shared and demonstrated:

Whole Wheat Chocolate Chip Cookies

 

1 c butter

¼ c peanut butter

1 c honey

2 eggs

1 ½ c whole wheat flour

1 tsp baking soda

½ tsp salt

2 c rolled oats

1 to 2 c chocolate chips

1 c hazelnuts, chopped

 

Cream together first 4 ingredients.  Add next 6 ingredients and mix well.  Add enough flour for stiff dough.  Drop by teaspoon on cookie sheet.

Bake at 375 degrees for 10 minutes.

 

Oat pancakes

 

1 c rolled oats

1 ½ c milk ( I used almond)

½ c spelt flour (you could also use whole wheat)

1 ½ tsp baking powder

½ tsp baking soda

¼ c almond butter (or peanut butter)

½ tsp salt

2 tbs butter

2 eggs
