A late start, but the garden is on and large zucchini are a plenty. Here is a zucchini boat recipe I whipped up this afternoon:
1 large zucchini (carved and inside chopped)
1 pkg tuna
1/2 c Irish cheddar cheese
1 cup fresh spinach
1 tbs mayo
1/2 tbs dried rosemary
1/2 c parsley
1 tsp salt
1. mix chopped zucchini with rest of ingredients and place inside and around zucchini boats.
2. cover and cook for 16 minutes in greased pan @ 450 degrees.
We enjoyed it with some corn chips. yum. luv the garden!
