development – steak left overs

My husband and I have been marinating alot lately, enjoying the grill weather.   At lunch we had some steak that we’d marinated last nite.  There were four small steaks that we’d butterflied to cook them faster and make sure they were tender.  My mom is with us (thank heavens), helping me last through the end of the pregnancy.  We ate about half of the steak, so at dinner I wanted to come up with something to use the left overs.  Here’s the recipes for the marinade and my leftover creation:

Steak Marinade:
· 1/3 cup soy sauce
· 1/2 cup olive oil
· 1/3 cup fresh lime juice
· 1/4 cup Worcestershire sauce
· 1 1/2 tablespoons garlic powder
· 3 tablespoons dried basil
· 1 1/2 tablespoons dried parsley flakes
· 1 teaspoon salt
· 1/4 teaspoon ground chili pepper

Marindade the steak for at least 3 hours.  

Steak Leftover Creation:

In a large skillet combine:

  • steak (cut into bite sized pieces
  • 1/2 cup artichokes, quartered (i used some out of a jar that was marinated)
  • 1/4 cup chopped cilantro
  • 1/4 cup mushrooms
  • 1 tsp salt

I poured some of the marinated juice from the artichokes in the pan and let everything warm for 5-6 minutes on medium.  We ate the steak dish along side the cheesy biscuits (previously posted), a spring green salad with balsamic vinaigrette, and some fresh fruit (cherries, bananas, and oranges).

Nothing like delectable leftovers…:)
