zitronen-mailänderli {swiss butter lemon cookies}

Our cousins living in Zurich sent us a beautiful family cookbook at Christmas: The Green Gourmet Family.  I love that the books divides its recipe sections into Seasons and Holidays…perfect for celebrating family traditions and creating new ones.  The first recipe we tried was Zitronen-Mailänderli {Swiss Butter Lemon Cookies} or Swiss Christmas Biscuits.  Hope you enjoy them as much as we have.  The dough is seriously to die for!

original ingredients
80 g butter
80 g zucker
1 ei
1 prise salz
1/2 zitrone
1/2 tl backbulver
200 g halbweissmehl
mehl zum auswallen

doubled & translated best I could 😉
2/3 cup butter
2/3 cup sugar
2 eggs
1/2 tsp salt
1 lemon
1 cup whole wheat pastry flour
3/4 cup white flour
1 tsp baking powder
flour for rolling out dough

instructions:

1. Cream butter and sugar. Add 1 egg, salt, zest of the lemon and 2 tablespoons of the lemon juice, and mix until smooth.
2. Slowly mix in flours and baking powder. Cover dough and place into the fridge for 20 minutes.
3. Roll out dough 1/4 ” thick onto a bit of flour. Cut with your favorite cookie cutters, place on cookie sheet and brush with the remaining egg (whisked).
4. Bake cookies at 350 degrees for 10-12 minutes.

Makes about 3 dozen cookies, Enjoy!
