The explorer had some very special primary teachers last year. This recipe was inspired by one of these lovely ladies, Brooke, of blissful roots. Thanks Brooke for making our love week extra yummy!
1 cup raw sugar
1 cup powdered sugar
1 cup butter
1 cup coconut oil
3 teaspoons vanilla
4 1/2 cups organic white flour
1 teaspoon sea salt
1 teaspoon baking soda
1 teaspoon cream of tartar
1. In mixer combine until smooth: sugars, eggs, butter, coconut oil, & vanilla. Add remaining ingredients.
2. Shape dough into 1″ balls and place on cookie sheet (about a dozen per sheet). Using the bottom of a glass, press gently on each dough ball, flattening to 1/4″ thick.
3. Bake in oven at 350 degrees for 5 minutes on convection. (375 for 7 or 8 minutes non-convection).
4. Beat icing ingredients in mixer until smooth. Once cookies have cooled completely add icing and enjoy!
