Our friends have been visiting their family in Slovakia for the past 3 months. How we have missed them! Here is a version of the sandwich bread, Ivana-style. Ivana sent me the beautiful photos below this weekend of her visit in Slovakia and Prague. 🙂 Enjoy!
-in mixer combine:
- 2 tbs olive oil
- 1 1/2 c almond milk warmed
- 1 1/2 c water warmed
- 4 1/2 tbs yeast
-(allow yeast to dissolve a few minutes)
-add:
- 3 cups wheat berries (ground)
- 1/4 c honey
- 1 tbs sea salt
- 5 tbs vital wheat gluten
- 3 tbs organic salted butter
-beat for 2 minutes
-add:
- 3 c kamut berries
- 1/2 c spelt berries
- 1/2 c flax seeds (all ground together)
- 1/2 tsp dried basil
- 1/2 tsp carraway seeds {I’m not sure but I may have put in cumin by mistake…:)}
- 4 tsp raw pumpkin seeds
- 2 tsp sesame seeds
- 2 tsp flax seeds
-allow dough to rest 10 minutes
-knead for 6-10 minutes or until dough is elastic and smooth
-cut in half and place in coconut oil greased pans
-cover and let rise 30-35 minutes or until dough has just passed the tops of the pan
-bake at 375 degrees for 35 minutes
-remove from pans and allow to cool on rack
Trying to decided which I like best. I do love a good herby-seedy loaf!
