development – slow cooked turkey & herbs

The French love flavor.  They slowly cook on low heat to create the wonderfully concentrated flavors that are rich and tantalizing.  With that in mind, here is an easy dish that can be slowly simmering on the counter all day long.

slow-cooked turkey with herbs

2-3 lb turkey breast
1 large onion, halved and sliced
3-6 fresh sage leaves
4 fresh chive leaves, chopped
1 cup sliced mushrooms
1-2 cups baby carrots
2-3 tbs olive oil
3 tbs lemon juice
1/3 c white wine vinegar
1/2 c water
1 tsp salt
salt & pepper to taste

  1. Cover the bottom of the crock-pot with the olive oil.  Place onions and carrots on the bottom, cover with the turkey and then the mushrooms.
  2. Pour atop the lemon juice, vinegar, and water.  Sprinkle the salt on top and place chives and sage on top of the turkey.
  3. Cook on low for 6-8 hours or until turkey is tender and moist.

Serve along side brown rice, quinoa or your favorite pasta.  We saved the stock and turkey leftovers to make some yummy turkey lentil & herb soup, as well as a coconut turkey, mushroom, & sage soup.
