Its funny how many wedding gifts you actually remember and think about every time they are used…or is it just me? 🙂 Cassi gave us a handmade recipe book filled with her favorites across the board. What an incredible gift! I have loved it! One of the first we tried were the crêpes. I muffled them a bit trying to do oats instead of white flour…but it was surprisingly good.
Recently, we tried them with spelt flour…they are now on our regular breakfast menu: 2 or three times a week. 🙂
cassi’s crêpes
1 1/2 c milk {we use almond milk}
1 c flour {we use 1 c spelt berries and grind them in the blendtec before add the rest of the ingredients}
2 eggs
1/4 c butter
1/4 tsp salt
We mix all the above ingredients in the blender, choose a cast iron pan the prefered size of the crepes. A tab of butter added and using medium heat, pour enough to cover 2/3 of the pan from the middle. Grab the handle and tilt the pan to let batter cover rest of the bottom of the pan. Cook on each side 1-2 minutes. {the smaller the crêpe, the easier to flip}
We eat them right away will all sorts of fresh fruit, seeds, nuts, jams, jellies and pure maple syrup. Guess what we’ll be eating tomorrow morning? 🙂

Probably my fave and most indulgent breakfast is german pancakes. They are FAR from healthy but oh so good. Mix 6 eggs, 1 cup milk, 1 cup flour. Melt half a stick of butter and pour that in a baking pan. Then pour the batter in and cook at 400 for 20ish minutes, until it puffs up and is light golden brown. OH man, these are sinfully delicious.
