As the kiddos were nestled into bed…a bowl of oatmeal seemed the perfect evening treat. But not just any oatmeal. Something special…
When it was just about ready, the aromas were filling the kitchen and swirling up to the loft, where the designer called down, “What are you making down there? It sure doesn’t smell like oatmeal!”
1 1/2 c thick oats (make sure they are gluten free if you are celiac)
1 apple, halved and in small slices (granny smith, gala,…whatever you prefer)
1-2 tsp raw sugar
2 tbs coconut oil
1/2 tsp ground cinnamon
1/2 c almond milk
1-1/2 c water
salt to taste
1. In a small sauce pan, warm coconut oil on medium to low heat. Add apples, cinnamon, and sugar. Cover and cook until tender. (8-10 minutes…really depends on how thin you sliced the apples).
2. As the apples are about ready, turn off the heat, still covered. Bring water to a boil, stir in oatmeal and salt, turn off heat, and cover for 5-6 minutes.
3. Top the oatmeal with the cinnamon apples, and almond milk.
