Instead of the usual baby gift when the grower arrived, the designer’s sister and her husband gave me a couple wonderful cookbooks. Such a great idea. I was so happy to try new recipes now that my appetite is back and the nausea gone. One of the books is You Won’t Believe It’s Gluten-Free! I’ve enjoyed reading through the recipes and have found a couple similar to my own. The designer thinks it’s great because now I don’t have to reinvent every wheel when it comes to wheat-free cooking. 🙂 So we tried their biscuit recipe (rice-based), and it was wonderful. The consistency was delightful as well. As usual, I chaged some of the ingredients, lessened the sugar… Oh, and I found the book on Amazon for $14, much better than the $21 list.
Here’s the recipe:
1 stick butter
1 c rice flour
1 1/4 xanthan gum
1 tbs baking powder
1/2 tsp baking soda
1/2 tbs turbinado sugar
1/2 tsp salt
3/4 c almond milk
1 tsp vinegar (used balsamic)
Cook at 375 degrees for 15 minutes (20 if making large biscuits). Mine made a dozen. 🙂
