Ever since enjoying Bonnie’s cheddar cheese crackers…I’ve been craving to make some of my own. I wondered what they would taste like with a white cheddar. After reading in some of my favorite cookbooks I found that both Nigella and Julia have recipes for cheese crackers. Nigella’s is made with Cashel Blue cheese…and I was inspired.
blue cheese spelt crackers {nigella’s savory irish blue crackers}
¾ c Cashel Blue (or another blue cheese)
½ c butter, softened
1 egg yolk
¾ c spelt flour (you can use all-purpose, wheat, or try some gf and let me know what you think)
¼ c blue cornmeal (I only had yellow…but am on the look out for the blue)
pinch of salt (depending on cheese saltiness)
Combine the cheese, butter, and egg yolk (I accidentally put in the whole egg). Work in the flour, cornmeal, and salt. Shape dough into a fat disc and place in the refrigerator to rest for 30 minutes. Roll out dough on parchement and cut out with your favorite small cookie cutter. You can brush some beaten egg on the top of each before baking (We skipped that part). Bake at 400 for 10-12 minutes or till desired crispiness.
Makes about 3 dozen small crackers.

Ah, what a guy that Ben is! A funny thing about the crackers…the kiddos kept wanting to share their “cookies” with family and friends. 🙂
